CAKE POPS!!!!!!
I made cake pops for my bestie’s baby shower this past weekend… I was also the game coordinator but I was WAY more stoked at how well-received my little cake pops were! I did a trial run a few weeks ago and really perfected them this time around. I’ve had a few requests for the recipe so here it goes…
For cake pops you can make any cake/icing combo you’d like… chocolate with chocolate, devil’s food with strawberry, etc. For the shower I did two kinds: vanilla confetti cake with French vanilla icing and spice cake with cream cheese frosting.
Start by baking a 9×13 rectangular cake and allowing it to cool. Cut into cubes and put in big mixing bowl. Add one cup of icing (maybe a little more, maybe a little less – the best way to figure it out is to taste it!). Then mash is all together with a potato masher (or you can do it in a food processor).
Mold into balls and place on a parchment paper-lined cookie sheet. Freeze for at least one hour.
Melt chocolate wafers in a bowl (I used a wide-mouthed glass). Then, one at a time, put a lollipop stick in each ball, dunk into melted chocolate until completely submerged, tap off access, and stand up on the same parchment-lined cookie sheet. Allow to dry completely.
